I just can't get to the bottom of this. I am trying to do something very simple. I want to put the product category into the columns of the invoice and it will not display.

You can bring the information that you need in the Inventory template with the exact merge field values.

Well. And what about if I want to link f.e. data from Client information into the Invoice template? I can easyli add the information the way you mentioned, hower this way, I am not able to edit those fields in the invoice when creating / editing one.
When I want to issue invoice to my client, I need to have in the invoice pre-filled his details (from Contacts) and not empty billing / shipping adresses if you know what I mean.

If I may continue - is there option in the system which would allow me to have more types of invoices in the CRM (different templates), which one could choose from when going to issue an invoice? And then the products in the invoice - with "Product name lookup", the products are not categorized, which would be pretty usefull once company has hundrets of products in different categories.
And what about the required fields? I have read somewhere else in the blog, that one cannot work with the required fields, but once we dont have use for them on the invoice?
I would love to use Zoho CRM for our businesses, as it is nearest to our requirements. However I would need such "bugs" solved. Is there any company which I could turn on to implement our requirements or is there a partner - developer - programm, which we could get into and do the changes ourselves?

You can create different templates for invoice module and use the templates while sending emails from invoices.
The feature for listing the products based on catagory is currently not available in our CRM System. We will implement it in our future updates .

I am affraid I have quite a few things to get solved and it is not likely to be solved just by support center in reasonable time. (even I may be wrong?! - if so, please let me know :) )
As we are quite serious about Zoho (I can imagine future Reseller cooperation if changes in the system would be possible), again question -
a) is there option for developers, where we could do the needed changes by ourselves
or
b) do you have your own proffesionals, which we could hire to implement our needs.
